Preparation time: 10 mins | Cooking time: 30 mins | Serves: 4 - 6 people
INGREDIENTS:
- 400 g fresh or frozen peas
- 4 eggs
- 1 onion
- 3 cloves of garlic
- 1 bay leaf
- 200 g of chorizo
- 1 ripe tomato
- 1 carrot
- 50 ml of white wine
- 1 tablespoon of pepper paste
- 1 teaspoon of thyme
- 1 teaspoon of chilli pepper
- 400 ml of water
- Salt to taste
PREPARATION:
Peel the onion and garlic cloves and chop them. Peel the carrot and cut it into cubes. Remove the skin from the tomato and cut it into cubes. Cut the chorizo into slices.
Place a pan on the heat with a drizzle of olive oil. Add the onion and garlic cloves and the bay leaf and chorizo. Add the tomato and carrot, mix everything and let it sauté for about 3 minutes.
Drizzle with white wine, add the pepper paste, thyme and season with salt and chilli. Add water, mix everything and bring to a boil. Add the peas and mix everything.
Add the eggs one by one to the pan and let them poach until they reach the desired doneness. Decorate with parsley and serve immediately.
